This Week

This is what arrived today:

Romaine Lettuce
Radicchio
Asparagus
Kale
Broccoli
Carrots
Potatoes
Onions
Apples

This is what I successfully used so far this past week:
Eggplant in fairly disastrous eggplant croquettes
Red cabbage in sauteed cabbage
Broccoli in cheese sauce
Stuffed portobello mushrooms
Fruit, mostly eaten as is, but some as apple and pear sauce for my 8-month-old daughter
Spinach, simply sauteed

Still left:
bok choy
some lettuce
some red cabbage

  1. It's amazing how far one medium bag of veggies goes. Last week, was a little crazy necessitating more eating out than I prefer. So I didn't get through anywhere near the amount of veggies I wanted.

    I did end up making:
    A roasted eggplant and feta spread--loved by husband, not by daughter
    Broccoli steamed, the excess filled a frittata with mushrooms onion and proscuitto
    Thai lettuce wrap ups with ground turkey
    A ginormous apple crisp
    Sauteed the spinach

    I still have left over
    some portobellos which I intend to stuff today or tomorrow
    red cabbage
    bok choy--too big to make baby bok choy and black mushrooms
